Chicken Rice Recipe Style

Ingredients
For rice

  • 3 cups (600g) scented Thai long-grain rice
  • 2 Chicken soup spoon fat with the skin
  • 2 Water Soup
  • 2cm piece ginger, lightly crushed
  • 2 garlic cloves, slightly crushed
  • 1-2 Tea taste with salt or
  • 3 ½ cup chicken broth rather reserved (or water with 1 tablespoon chicken bouillon powder in this one)
  • 2 or screwpine Pandanus leaves, jagged and knotted

Pak Cham Kai (chicken Impregnated days)

  • 1 whole chicken
  • Enough water (to cook)
  • 1 inch piece ginger, crushed
  • 4-5 cloves garlic, peeled and slightly crushed
  • 1 Tea salt

Chilli garlic sauce soaking

  • 10 fresh red peppers
  • 2cm piece ginger
  • 4 garlic cloves
  • 1 / 4 c. Tea salt
  • Calamansi juice of 2 limes
  • 2 Chicken soup broth reserved

Ginger sauce dunk

  • 75g ginger
  • 6 garlic cloves
  • 1 / 2 c. Tea salt
  • Calamansi juice of 2 limes
  • 2 Chicken soup broth received
  • Light soy sauce for chicken
  • 1 ½ c. Soup spoon garlic oil
  • 1 ½ c. Tea Sesame oil
  • 5 c. Light soy sauce soup
  • 1 ½ c. Soup spoon of sugar or flavor
  • 3 Water Soup


Filling

  • Fresh coriander leaves
  • Sliced chives
  • Sliced cucumber


Method
To prepare rice, wash several changes of water until the water is clean and clear.
Heat wok and add chicken fat and 2 tablespoons water. At a low boiling point, until the oil is free from fear of fat.
Ginger, garlic and fry well. Remove and discard the fat from chicken and then add the rice and salt. To blow up quickly to 1-2 minutes.
Transfer all ingredients into a pot with rice.
Add water or chicken broth and the leaves of the Pandanus. Cook until the rice is soft and dry. Paste in just before serving.
